Streamed audio can be very good, and correctly done, will exceed the quality of the video.  Audio degradation starts with the recording.  Nothing like having a good microphone (and microphone technique), good room acoustics, and bypassing the camera's ALC Mic.  Then choosing the wrong encoding settings can chew up what's left.
