SUBJECT: Food for Phil
Phil:  Microwave Gumbo

1 1/4 cup all purpose flour
2 large onions
2 bell peppers (aka green peppers)
1 cup chopped celery (about 3 to 4 stalks)
1 chicken cut up (about 2 to 2 1/2 pounds)
1 or 2 pounds sausage (Polska Kilbasa, aka "Polish Sausage",  is good)
4 cups water
3 cups chicken stock (or two cans Campbell's chicken broth)
1/2 tsp black pepper
1/4 tsp cayenne pepper (or a about 6 drops of Tabasco pepper sauce)

Opt, a few cloves of garlic sauteed with the veggies.

Cook some rice according to directions, Uncle Ben's is good.  Read the
box, why don't you?

In a 4 cup Pyrex measuring cup, brown 1 1/4 cup all purpose flour in the
microwave, by putting it in on high for about a minute at a time,
stopping, stirring with wooden spoon, run another minute, etc (takes
about 6-7 minutes), until the flour takes on a woody brown color about
like Nestle Quick choc powder.

(The more traditional way to fix a Cajun type roux, as opposed to a
French roux, is to heat in a black iron skillet equal amounts of cooking
oil and flour, medium heat, stirring constantly until it takes on a dark
mahogony color.  If it burns, you will know it!, toss it out and start
over.)

Remove and set aside.

In a large glass bowl, again using the micro wave on high, saute two
large onions chopped, 2 chopped bell peppers, 1 cup chopped celery.
Heat/stir, until limp and the onion begins to turn clear.

Meanwhile, back at the range, while you are doing all this, boil a
chicken in a large soup pot using 4 cups water and 3 cups chicken stock
( or 2 cans of canned Campbell's chicken broth is fine), seasoned with
the pepper and cayenne.  After the chicken is cooked, remove and let
cool, retain the water, skim off the chicken fat and discard (we are
going healthy here).

Debone and cut the chicken to bite sized pieces.  Chop up the sausage.

Get the water boiling again, after skimming the fat, and sprinkle in the
browned flour ("roux") and stir.  Add the sauted veggies.  Add the
chicken and sausage, and salt to taste.

Let simmer on the stove 3 to 4 hours, stirring occasionally.

Serve the gumbo with a scoop of rice in the bowl.  Down here, we like
potato salad on the side, some garlic bread, and cold beer to wash it
down.

If you want a seafood gumbo, substitute for the chicken and sausage some
shrimp, oysters, and chuck a few crabs in there for good measure.

It ain't rocket science, you can vary from the quantities listed without
blowing anything up.
